When I came to Australia six years ago I wanted to continue the cooking that I enjoyed so much, so I bought my bakery shop. What are your earliest memories of food? When I was around five years old, I loved to cook sweet items like traditional Korean sugar cookies and sugar cinnamon candy with my friends in my family kitchen. How long have you been a chef? I have been cooking professionally for around two years. I learnt my cooking skills working with a chef in Eastwood. What type of food do you serve? We have a mixture of pastries and biscuits baked on-site and at Pishon in Eastwood. We also serve meals and breakfast, and our customers say we have the best coffee in Strathfield. Korean baked goods such as fruit and vegetable breads with grapefruit, bananas and sultanas, Korean red bean bread, sticky rice and sweet potato cake are a just a few of our Korean delights. We also have plenty of Australian meals including a big range of salads and breakfasts. What is your specialty dish? Our fruity shaved ice dessert. It has layers of fruit, syrup and red bean paste and is also a good digestive. ourstrathfield.com.au Fruity shaved ice YOU’LL NEED 1/3 500ml bowl of shaved ice 1 tbsp strawberry syrup 3 tbsp tinned mixed fruit 1 kiwi fruit, peeled and sliced 3 strawberries, sliced 1⁄2 banana, sliced 2 tbsp red bean paste (available from Korean supermarkets) 1 tbsp milk syrup (available from Korean supermarkets) 1 scoop vanilla ice-cream Pastry chef Pishon Patisserie & Cake Cafe METHOD Put shaved ice in a 500ml glass bowl and pour strawberry syrup on top. Add a layer of tinned fruit, more ice, then a layer of red bean paste followed by kiwi fruit, strawberry and banana. Drizzle with milk syrup and top with ice-cream. Serve immediately. What is your most popular dish? Our shaved ice dishes. People like to pop in and share them with friends. They’re a real treat on a warm day. Where do you source your ingredients? We buy a lot of our supermarket items from Han Yang Groceries and Hanaro Mart in Strathfield Plaza. Where else do you like to eat? I often pop in to Hanyang BBQ at The Boulevarde in Strathfield for a traditional barbecue meal.
