What are your earliest memories of food? When I was 10 years old I began cooking for my family in China. I am the middle child in my family of seven, so I gained lots of experience in the kitchen. How long have you been a chef? I have been cooking professionally since I moved to Australia 17 years ago. What type of food do you serve? We serve Vietnamese meals like lotus stem salad, pork summer rolls, salt & pepper soft-shell crab, bun bo xao [beef noodle salad] and bo luc lac [shaking beef]. We have a number of Chinese dishes also on the menu. And for dessert, the fried ice-cream is popular. What is your specialty dish? Bun dac biet, a tasty but healthy meal featuring sugar cane, pork, vermicelli and stacks of crunchy fresh vegetables. What is your most popular dish? True to our name, the beef pho noodle is very popular. The Vietnamese deep-fried spring rolls are also a big favourite, and of course the bun dac biet is a must-have for our customers. Where do you source your ingredients? Sometimes we shop at Sydney Markets twice a day for our vegetables. We buy our ourstrathfield.com.au METHOD Cook vermicelli in hot water for six minutes. Cool in cold water and drain. Heat spring rolls and chao tom, and keep warm. Lightly fry shallots and set aside. Mix chicken stock, egg, garlic, lemongrass, fish sauce, sugar and salt in a bowl, add to pork neck and stir-fry in wok on high until cooked. Place noodles in large pho bowl and separately arrange vegetables and pork. Sprinkle peanuts over pork and add spring rolls and chao tom. Serve with Vietnamese dipping sauce. Bun dac biet YOU’LL NEED 300g pork neck, thinly sliced 250g pre-soaked vermicelli 1 fried sugar cane prawn roll (chao tom) 2 spring rolls 1⁄2 tsp chicken stock cube 1⁄2 whisked egg Handful bean sprouts Handful chopped lettuce 1⁄2 handful pickled carrot 1⁄2 handful cucumber 2 shallots, chopped 5 crushed peanuts 1 tsp crushed garlic 1⁄2 tbsp fish sauce 1 tbsp chopped lemongrass 1 tsp white sugar 1 tsp salt meat from the Kin Fat Meat Market Family Butchery at Berala.
