I’ve been cooking in restaurants for 10 years. I find cooking for my customers and creating really tasty traditional Korean meals is a very rewarding experience. wHere did you learn to cook? I learnt to cook at Ryde TAFE where I did a course in commercial western-style cookery, and at Crows Nest TAFE where I studied Asian cookery. wHat type of food do you serve? We serve traditional Korean meals. We like to keep our food true to its roots and that’s pretty easy because we can get such tasty, fresh ingredients around the Strathfield area. wHat is your speciality? We do a monkfish recipe, and the fish is imported snap- frozen from China. The monkfish is especially popular among our Korean patrons. We do really great barbecue meats - that’s what we’re famous for. wHat is your signature disH? My customers love the pork schnitzel. Even though it’s quite a simple dish, it’s very delicious and many of our customers are ourstrathfield.com.au MetHod Put flour, bread crumbs and egg in 3 separate bowls. Heat oil in pot. Dip and cover pork loin in plain flour, then cover in egg and coat in breadcrumbs. Carefully place pork loin in hot oil and fry until cooked through and golden brown. pork schnitzel 4 cups vegetable oil 250g pork loin, tenderised 1 egg (whisked) 1 cup plain flour 1 1 /2 cups breadcrumbs salt and pepper to taste hooked on it. It’s definitely one of our most popular dishes. We also have a set menu which is particularly popular with couples. It’s barbecued marinated beef, chicken and pork belly, followed by a hot pot with soup, a barbecue salad and lastly, fried dumpling. wHere do you source your ingredients froM? We like to keep our ingredients really fresh and full of flavour, so we buy our fresh vegetables and herbs twice a week from Flemington Markets. We buy salmon and oysters regularly from the Sydney Fish Market because we like to give our customers seafood of the highest quality. chef@ doo ri bbQ restaurant
